:: Why I Cook ::
I've been racking my brain trying to think of something to write. I have yet another four half-written posts saved up, yet it took almost two months before I found something worth writing about, and it wasn't even my idea. I read this great post from a blog read regularly and he got his inspiration from an enthusiastic food writer.

So why do I cook. I almost have too many reasons to list and while long posts aren't exactly new to me, I'll run down some of the more important points.

- I cook to eat. Seems like a resounding *DUH* right? But I love to eat and if you were to ever meet me, you can tell I don't miss meals often. Or ever. But other reasons range from my general disdain for most processed foods and microwave meals (it's been literally a decade since I bought one) all the way to health concerns. I also know what I like and therefore it's easy to make what I like.

- It's a hobby that I have a great deal of passion for. I love it, plain and simple. People I work with have asked why I don't pursue cooking as a profession. I think if I had to do it every day as a way to make rent, I would lose enthusiasm for it, having to grind away behind a hot line 8-10 hours a night, 5 nights a week. As it is now, if I don't feel like cooking I just stop by Five Guys or if I'm broke, whip up some eggs. Besides, I work in a restaurant where I get along with the cooks, it's also easy for me to pick up tips here and there.

- Cooking is an excuse to buy myself some great new kitchen knives. Also got a bamboo cutting board, a new honing steel, a cast-iron skillet and many entertaining evenings playing chef. (Ironically, as one of my goals for this year is to be more social, I'm wondering if this is a good thing.)

- Many waiters, after a long shift, like to drink themselves into oblivion or light up a joint. While I do love a good drink, cooking helps me to relax as much as a night out with friends and I get more of a kick from fixing a good meal.

- On that same note, If there's anything I love more than cooking, it's music. Few things make me happier than cooking while I have my favorite songs playing in the background. (I'm even happier when sipping on a good whiskey.)

- Personal fulfillment. I rarely cook for people and when I do, it's only for the closest of friends or a woman I'm dating. Even if I'm dicking around with a recipe and I need guinea pigs to sample my dish, I only invite the few friends I can actually spend more than 30 minutes with without needing booze to keep me interested. Along those lines, I've never cooked to impress a woman hoping she'll date me. As much effort as I put into my dishes, if a woman wants me to cook for her, she has to show me something. (And I don't mean her tits.)

(Though it might help.)

- I love trying something new and experimenting with ingredients. I remember how intimidating it seemed the first time saw Alton Brown butcher a whole beef tenderloin. I also remember trying it myself the first time and thinking to myself, "that's it?" and enjoying beef dishes the rest of the week. I remember the elation of braising lamb shanks for the first time. I especially remember finally learning how to precisely slice salmon into equally thin pieces with my new sashimi knife and the look on my buddy's face when he saw and sampled my hamachi.

- I enjoy the challenge. I'll make the best steak tartare you'll find outside a fine restaurant. My espresso-rubbed short ribs braised in chocolate stout and served over vanilla mashed potatoes is amazing. So is my own homemade tomato sauce. I received moans of approval from people who tasted my coriander crusted snapper with tequila-lime sauce and jalapeno parsnips puree. I can make my own salad dressings. And I've said many times; I make the best guacamole on the East Coast. But none of these came out great the first time and they all seemed difficult at first. And while I have these and a few other dishes I rotate through, I really don't know as much as most home cooks. I don't know the first thing about baking. I couldn't make a dessert from scratch other than opening a pint of Ben 'n Jerry's. And even though I'm good with red meats and fish, I can't do that much with chicken beyond frying up buffalo wings. That's the next hurdle I'm looking forward to.

- I cook because life is better those few minutes I spend in the kitchen. As much as I enjoy a good dining experience, food tastes just that much better when it's earned.

:: This Thing On? ::
I know. It seems I write one of these posts every few months or so saying "I'm still here" after going a few weeks without posting anything. Well, I'm still here.

It's not that I haven't tried blogging but I I've had more false starts than the Tampa Bay Buccaneers and it's disconcerting how the drafts in my Blogger Dashboard have started to pile up. I've finally figured out that it isn't so much that it's writer's block, at least not in the traditional sense.

I used to blog frequently enough and practiced writing enough that I developed my own style. Probably because I haven't been as prolific lately but I think I've lost that crucial feel for writing. There's also the possibility that having both a Facebook and Twitter account might be distracting me. (Then again, it's not like I update those pages all that frequently either.) It's certainly not for lack of material.

I've been reading some different blogs lately; not the ones I have linked on my page (which reminds me: update links); many of which I enjoy the content but a few other, while the topic itself isn't the most scintillating, they possess a very distinct, very elegant voice that I enjoy. It makes me wonder if I should try to tweak my writing or just try to keep hammering away until I get it back.

Either way, I'm still here.

:: I'm Back ::
It's been a month since my old iBook went on life support. After five and a half years of faithful service rendering graphics and ads, composing copy and blog posts, keeping me updated on sports, helping me research food and wines, and downloading porn other miscellaneous activities; logic board, and two batteries, and two chargers later, she finally succumbed to age.

She's succeeded by my new, white MacBook which i pretty much a vastly updated version of my old one. As much as I would have loved to buy a 15" MacBook Pro, my budget couldn't justify the purchase but honestly, this is as much computer as I need at this point. the new one is a little lighter, sleeker, and way faster. The screen is a touch smaller (13.3 vs. 14.1) but it's perkier, er, brighter.

As for the monthlong blogging break, well...

A lot has happened, but few things have changed. A couple of dates and a few numbers that led nowhere. They were good women but they just didn't intrigue me after the first drink (I thought alcohol was supposed to make women more interesting? Or is that for men? I forget). But then again, I've been in something of a funk lately so I probably wasn't at my best either. In fact, thinking about it now, whatever charm or move that might have initially attracted them to me was slightly diminished those nights.

Took a chance and bought a bottle of Bourbon called Buffalo Trace and it turned out to be fantastic.

I'm still at the Steakhouse and I've seen many of the original hires leave. Some left for greener pastures, other were told that their services were no longer required (couple of interesting stories there). Three months after we opened, the managers finally seemed to have their shit together and they seemed to have figured out that I actually know what I'm doing, unlike a few of my otherwise cordial coworkers and I've been getting good schedules as a result.

My guitar still sounds as sweet as ever.

...I just don't know to write about. There's stuff going on, nothing life-altering or anything. But I feel like some of it is stuff I've written about before. Different people, different perspectives, and different scenarios, but similar plot and I don't know if you want to read that nor do I feel like I necessarily want to write about it. :: Hospital ::
Thanks to the well wishers who were nice enough to leave comments in the last post. That was very kind of you. The rest of you readers can eat my ass. Just kidding. This was the first in my adult life I had to go to the hospital as a patient and can I tell you? It SUCKED.

The short version is that my stay was caused by hyponatremia. It's a case of severe electrolyte imbalance from low sodium levels in the body. (Read more about it here and here). In my case, it started after a round of tennis Saturday morning. I usually chug some water beforehand since I naturally sweat a lot. But I had some diarrhea beforehand from eating ceviche the night before and didn't compensate for it. I played my usual time, it wasn't any warmer or more humid than before, but I felt a little lightheaded once I got home. I didn't drink my usual amount of water but I refilled my water bottle twice while playing, which I thought would be plenty.

Once I got home, I chugged a couple more glasses of water before stretching out my kinks. Then the cramps started. It started in my legs, moved up to my back, then my abdomen, and even my toes. I was still feeling light headed. I drank another glass of water. I made my way to the restroom to pee but I noticed the volume was inconsistent with my intake, and what little came out was this putrid yellow color. Heat exhaustion? Maybe.

I read a lot of sports articles so I'm familiar with the symptoms of heat exhaustion. I also read about hyponatremia but it never crossed my mind since the articles I read usually related to endurance athletes (marathoners, triathletes). I drank more water and stood under a cold shower for a while. (I should point out that my glass is a little larger than your average water glass.)

Didn't help much. I became dizzy, my breathing was shallow, and my hands were cold. My hands are almost never cold. On top of that I felt nauseous. As stupid as it may sound, that was my first indication that something might be really wrong since I have a Seinfeld-like streak of never vomiting .

I got home before one and now it's almost four. I have to be at work in an hour and I can't even stand up without feeling faint. I somehow manage to call work and tell Antonio that I'm not sure if I can make it. He knows my track record in my short time there so for me to call in sick, he knows something's up. He tells me to stay home and get better.

When I tried to walk to the fridge to get more water, my legs gave out. My nausea built up to the point where I had to throw up. I somehow make it to the bathroom and I vomit almost nothing but water. No blood, fortunately but I'm actually somewhat upset that I broke my streak. I still had my phone so I dialed 911 while wondering why the ceiling was spinning faster than the ceiling fan. The paramedics show up, and I try to explain to them what happened in as much detail as possible.

I barely remember the ride to the hospital. I kinda remember being handed a clipboard in the waiting room, but my vision was blurry and my hands were so weak I couldn't write anything. I vaguely remember laying on a gurney with the doctors asking me what happened, asking my name, the date, and if I knew where I was (earth!). I distinctly remember trying to explain but I just couldn't find the words. I can only imagine how incoherent I must have seemed. "Played tennis... dehydrated... cramps... diarrhea... dizzy..."

I woke up a few hours later and saw blurry silhouettes of people looking down at me. Once I gathered my senses, I noticed I had an oxygen tube in my nose, a bandage inside my left elbow, and an I.V. drip on my right hand. I had these sticky things on my chest with wires attached, and those wired led to a heart monitor. I wasn’t flatlined, which I took as a good sign. I finally saw these people looking down at me and half-expected a large black man to lean over and say "hello Neo." I pass out again.

A little later, I wake up again, feeling a little closer to normal. I stay awake, and I realize I have this massive urge to pee. I try to get up, and I vaguely hear a lady say "not again" and walk over to my bed. "Sir, please don't try to more around. You have to stay in bed." My first coherent words of the night were, "dude, I have to piss." She hands me a jar. You're fucking kidding me right? Oh this is gonna suck. I do this a few more times during the night, which apparently shows the doctors I'm healthy enough to remove from the ER and into an intensive care room.

On the way up a nurse tells me exactly what happened. It's then he mentions hyponatremia. Really. I thought maybe my heat exhaustion advanced to a heat stroke, but I got fired from a restaurant despite being the only one there who didn't do drugs, so what the hell do I know. I ask what would have happened if I didn't call 911. "You might have suffered from brain damage, maybe fallen into a coma..." Oh, good to know.

Basically, I lost a lot of salt and fluids from all the sweating and didn't replace the salt. I overdid it in replacing the fluids, throwing my electrolyte balance completely out of whack.

They wheel my to my room, complete with a TV and a brand new urine jug. Great. I look at the clock. It's after 3am.

I end up staying all of Sunday and Monday, despite my constant pleas to leave. I felt fine, I wasn't suffering any ill effects, and I was getting sick of having my blood drawn (eight times! EIGHT! My left elbow looks worse than a heroine addicts'). The reason they kept me so long was to make sure my CPK levels returned to normal. I think one of the nurses told me when I arrived, my CPK levels were around 3000, and normally, healthy levels are... umm... considerably less (somewhere in the low hundreds if I remember correctly and a lot of my recollection is a little hazy).

During my stay, I have to pee into a jug, endure having my blood drawn repeatedly, and deal with limited mobility thanks to being hooked up to an I.V. the whole time. (It was a 9% sodium solution in case you're curious. You probably should know these things.) I don't sleep well. I fight boredom. I have bizarre dreams I think too much (never a good thing). The food is bad. I hate this place.

But I keep telling myself that it beats brain damage or death.

I finally get released Tuesday afternoon. I'm relieved more than anything. The nurse tells me that while my CPK levels aren't quite back to normal, they've dropped fast enough that I'm safe as long as I follow a few precautions. She tells me avoid sports for a while, and to drink lots of Gatorade over the next few days.

It's about one when I get home. Mike looks hungry. Rick-E is nowhere to be seen. I figure he's sleeping under my sheets again. I take a nice cool shower and get ready for work. I walk into my closet for some fresh clothes and see my cat sitting on top of the shelf like he's Simba on Pride Rock. How the hell did he get up there? I look down and see the pile of clothes and hangers strew about the floor. That's how. I wanna be mad I'm more impressed than anything, kinda like Ron Burgundy when his dog pooped in the fridge but at a whole wheel of cheese.

There's been a lot going through my mind those few days in the hospital and afterwards, and I'll probably blog about it later. But I'm happy to still be here. But I never want to go through that again.

If, by reading some of my previous posts about the status of my dating life, you concluded that I was in some dire mental state where I was moping around the house, listening to depressing Bob Dylan songs, or engaging in some drunken benders on a regular basis, I understand. It hasn't been anything like that at all. I still go out with friends and have fun, I go to work and joke around with co-workers like I always do, and I don't drink any more than I usually do. If anything, I've been more depressed about the state of my Los Angeles Dodgers lately, but that's a different post.

It has been on my mind from time to time, however, but I've been keeping myself occupied with other things. And hey, football season started!

... and by here I mean at my local Starbucks on West. I had the evening off and I've spent the last three hours working on my advertising book (and my "working on," I mean staring at my computer screen, while listening to Led Zeppelin.") It's an endless cycle of trying to figure out what to do and what not to do and it's a little more difficult since I don't have a teacher or a Creative Director to get direct feedback from.

But I've been working on it at spurts so the fact that I spent three hours on it today is a good step. Maybe I need to pretend like I'm an employeed creative and just start drinking more. Oh wait, I already do that.
